Edamame "Split Pea" Soup

A hearty, protein-rich soup made with frozen edamame that resembles traditional split pea soup with a vibrant green color and creamy texture.

Ingredients

  • 1 lb (450g) frozen shelled edamame
  • 2 tablespoons olive oil
  • 1½ cups onion, diced (about 1 large onion)
  • 1 cup carrots, diced (about 2 medium carrots)
  • 1 cup celery, diced (about 2 stalks)
  • 3-4 cloves garlic confit, mashed
  • 1½ cups zucchini, diced (about 1 medium zucchini)
  • 1½ cups cauliflower florets, chopped small
  • 6 cups water
  • 3 Edward & Sons vegetable bouillon cubes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon white miso paste (optional, for depth)
  • Salt and pepper to taste
  • Splash of lemon juice or vinegar to finish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes, stirring occasionally.
  2. Add mashed garlic confit and cook for another minute, stirring to incorporate.
  3. Stir in the smoked paprika and thyme, cooking for 30 seconds.
  4. Add the frozen edamame, zucchini, cauliflower, water, and bouillon cubes. Stir until the bouillon cubes dissolve. Add bay leaves, bring to a boil, then reduce heat and simmer for 20-25 minutes until the edamame and all vegetables are very tender.
  5. Remove bay leaves. If using miso, dissolve it in a small amount of the hot broth before stirring it into the soup.
  6. Use an immersion blender to partially blend the soup, leaving some texture, or blend about half in a regular blender and return it to the pot. This creates that thick, split pea-like consistency.
  7. Season with salt and pepper. Add a splash of lemon juice or vinegar to brighten the flavors.
  8. Serve hot with crusty bread. You can garnish with croutons, a drizzle of olive oil, or fresh herbs if desired.
