Ingredients

For the cupcakes:

  • 2 cups Kodiak Cakes Buttermilk Power Cakes mix
  • 1 large egg
  • 1 cup light canned coconut milk
  • ⅔ cup coconut oil, melted
  • ¼ cup granulated sugar or sweetener of choice
  • ½ cup shredded sweetened coconut
  • 1 teaspoon vanilla extract

For the frosting:

  • 1 block (8 oz) cream cheese, softened
  • ¼ cup butter, softened
  • 1 teaspoon coconut extract
  • 2 cups powdered sugar
  • 2 tablespoons coconut milk, if needed
  • ¼ cup toasted shredded coconut, for garnish

Instructions

  1. Prepare the batter: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners. In a large bowl, whisk together the melted coconut oil, egg, coconut milk, granulated sugar, and vanilla extract.
  2. Combine ingredients: Add the Kodiak Cakes mix and shredded coconut to the wet ingredients. Mix until just combined. Be careful not to overmix, which can result in dense cupcakes.
  3. Fill and bake: Pour the batter evenly into the prepared cupcake liners, filling each about three-quarters full. Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool completely: Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  5. Make the frosting: While the cupcakes cool, beat the softened cream cheese and butter with a hand mixer or stand mixer until smooth. Add the coconut extract and gradually mix in the powdered sugar until fully combined and fluffy. If the frosting is too thick, add coconut milk, 1 tablespoon at a time, until it reaches your desired consistency.
  6. Frost and garnish: Once the cupcakes are completely cool, frost with the coconut cream cheese frosting. Sprinkle with toasted shredded coconut for a finishing touch.
