Cajun Salmon Cakes
Ingredients
- 1 lb cooked fresh salmon, flaked (about 2 cups)
- 1/2 cup grated zucchini (squeezed dry)
- 1/2 cup grated carrots
- 1/4 cup finely diced bell peppers
- 1/4 cup finely diced onions
- 1/4 cup finely diced celery
- 3 egg whites
- 1/3 cup chickpea flour
- 2 tbsp cajun seasoning
- 1 tsp smoked paprika
- 1 tsp granulated garlic
- 1/2 tsp salt (adjust based on how seasoned your salmon is)
- 1/4 tsp pepper
- Optional: 1/4 tsp crushed red pepper for extra heat
- Optional: 1 tbsp lime juice for brightness
Instructions
Prep (can do 1-2 days ahead):
- Cook your fresh salmon if not already cooked (bake at 400°F for 12-15 minutes, or pan-sear). Let cool completely
- Flake the cooled salmon with a fork, removing any skin and bones
- Grate the zucchini and squeeze very well in a clean kitchen towel to remove excess moisture
- Grate the carrots and finely dice the bell peppers, onions, and celery
- In a large bowl, combine the flaked salmon with all the vegetables
- Add egg whites and mix gently until combined
- In a small bowl, mix together cajun seasoning, smoked paprika, garlic, salt, and pepper
- Add the spice mixture to the salmon and vegetables, fold in gently
- Gradually add chickpea flour, mixing until the mixture holds together when pressed (be gentle to keep some salmon texture)
- Let mixture rest for 5 minutes
- Form into patties about 2-3 inches diameter, 1/2 inch thick
- Place on a parchment-lined tray
- Cover and refrigerate until ready to cook
Air Frying:
- Preheat air fryer to 375°F
- Lightly spray both sides of cakes with olive oil
- Place in air fryer basket in a single layer (don't overcrowd)
- Cook for 10-12 minutes, flipping at the 6-minute mark
- They're done when golden brown and crispy on the outside
Tips
- Fresh salmon cooking tip: Season lightly when cooking the salmon initially - you'll add more seasoning in the mixture
- Don't over-mix after adding the salmon - you want to keep some flaky texture
- These are more delicate than canned salmon cakes, so handle gently
- The Cajun seasoning gives them a nice kick - adjust to your heat preference
- Squeeze that zucchini thoroughly - moisture is the enemy!
- These are more expensive than canned salmon but have a fresher, more premium taste
- Serve with salsa, guacamole, or pickled jalapeƱos
- Great with a squeeze of lime juice
- These freeze well after cooking - reheat in air fryer at 350°F for 5-6 minutes
